GEISENHEIM Appassimento 2021

These hand harvested grapes were dried in our greenhouse prior to crushing and fermenting. The bunches were carefully laid custom build racks in a single layer and dried for 4 – 7 days.

Produced from Giesenheim 318 grapes
The bouquet is dominated by aromas of fresh peaches. Notes of lilac, honey comb and lime zest complete this peach forward profile. The aromas carry to the palate, peach forward with a zesty finish.

Food Pairings:

Grilled poultry, lightly battered fish, butternut squash soup, cured meats, picnic fare or lighter pasta dishes.

Geisenheim (Guy-Zen-Hi-M) originates from Germany – specifically from The Geisenheim Institute. We grow two clones on the property, Geisenheim 322 and Geisenheim 318.  318 is a crossing of Riesling and Chancellor. Typically the Geisenheim variety has an aromatic profile of mineral, grapefruit, peach and hints of herbs. A light and lively variety that produces dry to sweet table wines.

Winemaker’s Notes:

Geisenheim tends to show really nicely in this style of wine. The profile is so peachy, then notes of floral then more complex notes of waxy honeycomb come in. Very aromatic with some weight to it, with its crisp acidity a really great food wine. Bone dry at 3g/L residual sugar
