CABERNET FRANC Appassimento 2021

These hand harvested grapes were dried in our greenhouse prior to crushing and fermenting. Our custom built pine racks were lined with maple leaves from our sugar bush. The bunches were carefully laid on the leaves in a single layer and dried for 4 – 7 days.

Rich aromas of vanilla, black berries and black forest cake are complimented by tones of purple plum and stewed cherries. The bouquet is balanced with notes of toasted oak, spice and freshly chopped wood. The aromas carry to the palate with an elegant structure and lingering finish.

Winemaker’s Notes:

Done in the Appassimento method this is a beautiful big red! Awesome flavour profile and depth firm tannin from the new American oak barrel with a balanced acidity and alcohol. This wine aged in bottle for one year before being released. Drinking beautifully now with the potential to cellar for 7+ years.
