These hand harvested grapes were dried in our greenhouse prior to crushing and fermenting. The bunches were carefully laid on our custom built pine racks in a single layer and dried for 4 – 7 days.

10 Months in American Oak – Elegant aromas of cherry, raspberry and raisin, are balanced by rich notes of pepper, cedar and light nuances of vanilla and violet The aromas follow through to the palate with pepper spice, firm tannins and lengthy finish.
Harvest 22° Brix post drying 28.8° Brix. 6g/L Residual Sugar

Food Pairings:

Roasted pork, spice crusted duck breast, olive tapenade, Cremini and butternut squash soup, goat cheese with roasted red peppers

Winemaker’s Notes:

Only a single barrel of this blend was made! The appassimento technique intensified the flavour profile intensely. Lots of ripe notes of cherry and pepper come through, the Gamay maintains a lightness – this wine is beautifully medium bodied. It has a great acidity making it very food friendly wine. Because of the small quantity (only 447 bottles made!) the wine is unfiltered.
