This wine delivers outstanding layers in profile. Aged in French oak the aromas range from ripe peach, apple and citrus zest to complex notes of light floral, honey, vanilla bean and caramelized pineapple. The palate progresses from the fruit to the rich toasty notes on the finish. Despite the sweet aromas this wine is dry with a soft acidity and lengthy finish.

Auxerrois (Ox-War) is another of the various clones of Pinot Noir. Auxerrois Blanc is a light white grape with qualities that range from neutrality to honey to asparagus, all dependent upon production method and oak ageing. This variety originated in Alsace France, and is not widely grown. This is a very unique variety for Waupoos Estates, it is often produced as a dry table wine with a very fruit forward profile and smooth acidity.
Chardonnay (Shar-doe-NAY) – The world’s most popular white grape variety, originating in Burgundy France Chardonnay is grown in virtually every wine growing region . A chameleon grape that is highly adaptable to manipulation in the vineyard and diversity in winemaking, it is capable of producing a wide range of wine styles. Often seen in a dry oaked style, it can also be light and crisp, sparkling or even sweet.
A really great blend! Loved watching this wine progress in the cellar. A touch of French Oak adds a nice complexity and it adds this dimension of toasty vanilla without being overbearing. Fermented totally dry it sits at 6g/L residual sugar, a full bodied white wine with a fantastic layered profile.
