AUXERROIS 2021
Aromas of lemon marmalade and Meyer lemon meet notes of cantaloupe, yellow plum and crisp green apple. There is a lovely balance between citrus and slightly sweeter aromas in this wine. The aromas carry to the palate, up front fruit and citrus notes with a crisp yellow plum finish.

Auxerrois (Ox-War) is another of the carious clones of Pinot Noir. Auxerrois Blanc is a light white grape with qualities that range from neutrality to honey to asparagus all dependent upon production method and oak ageing. This variety originated in Alsace France and is not widely grown which makes it a unique variety for Waupoos Estates. It is often produced as a dry table wine with a very fruit forward profile and smooth acidity.
WINEMAKER NOTES:
Auxerrois is always a fun variety to work with. It is often a super aromatic variety during fermentation and as the wine progresses the aromatics become more delicate. The aromatics are really citrus based, like a sweet citrus marmalade, it’s a light refreshing wine with 3g/L residual sugar. Expect tartrates
