All of these wines were produced in the Appassimento style. The hand harvested grapes are dried in our greenhouse prior to fermentation. The bunches are carefully laid on custom built racks and dried for 4-7 days. This essentially dehydrates the grapes (to an extent) concentrating the flavours, sugars, and acidity. These wines as a result are full bodied, very aromatic and deep in colour.
Vidal Appassimento 2021
This layered bouquet offers aromas of apricots and canned peaches with notes of wildflower honey and fig. The aromas carry to the palate with flavours of candied lemon peel, and peach.
Food Pairings: Seared scallops, steamed mussels, honey and walnut baked brie, smoked chicken, leafy green salads.
Geisenheim Appassimento 2021
The bouquet is dominated by aromas of fresh peaches. Notes of lilac, honey comb and lime zest complete this peach forward profile. The aromas carry to the palate, peach forward with a zesty finish.
Food Pairings: Grilled poultry, lightly battered fish, butternut squash soup, cured meats, picnic fare or lighter pasta dishes.
Baco Noir Appassimento 2020
Rich aromas of vanilla, black berries and black forest cake are complimented by tones of purple plum and stewed cherries. The bouquet is balanced with notes of toasted oak, spice and freshly chopped wood. The aromas carry to the palate with an elegant structure and lingering finish.
Food Pairings: Grilled steak, rosemary braised lamb, mushroom risotto, roasted root vegetables, firm aged cheese.
De Chaunac Appassimento 2020
Aged 9 months in American oak, rich aromas of strawberry jam, preserved plum and hints of spice are lightened by notes of fresh raspberries and floral. These weighty aromas are balanced by notes of toasted oak and whispers of caramelized coconut. The aromas carry to the palate with a rich mouthfeel, balanced tannin and a lingering finish.
Food Pairings: Crispy duck, grilled beef with rosemary potatoes, osso bucco, grilled eggplant.
