Persian spiced ragout of preserved tomatoes and squash

Braised, cured, and smoked pork, sauerkraut, riesling

Farm-Raised Hen
Braised in 401 Cider, Advieh spice, with crème fraiche and mint

Ontario Trout
Sautéed greens, Frontenac reduction, apple-wood smoked barley

Preserved Plum Clafouti and Ice Wine Chantilly

Goat’s Milk and Maple Crème Brullee


Our focus is Farm to Table – Using the freshest proteins and produce from our Estate. What we cannot harvest ourselves we source as locally as possible from our friends and neighbours. We try our best to accommodate allergies or aversions.
