Originating in Bordeaux France Cabernet Franc is an early ripening variety. It can be used for blending with other wines of Bordeaux where it adds acidity and aromatics. Now gaining more respect and recognition as a single varietal wine it is typically lighter in tannin and style then Cabernet Sauvignon. It has a distinct violet and raspberry bouquet, red fruit flavours and a nuance of herbs.
Cabernet Franc Appassimento 2017
These hand harvested grapes were dried in our greenhouse prior to crushing and fermenting. Our custom built pine racks were lined with maple leaves from our sugar bush. The bunches were carefully laid on the leaves in a single layer and dried for 4 – 7 days.
Oak: French oak
Elegant aromas of dark plum, raisin, blackberry and hints of chocolate, light nuances of vanilla and violet elevate the bouquet. The aromas follow through to the palate with a luxurious mouthfeel and lengthy finish.
Food Pairings: Beef, mushroom dishes, hearty stews, charcuterie with strong cheeses or lamb. A great after dinner wine on its own or with decadent desserts.
I can’t help it … Cabernet Franc is my favourite red grape variety to work with! It grows beautifully at Waupoos and always exhibits these totally classic cab franc characteristics – lots of red fruit, coffee bean, notes of violet and spice. Appassimento style really enhanced all of these aromas and flavours producing a very dry (4.5g/L) red! Still a young wine it is drinking very well now or will cellar 3-5 and even up to 10years
