This complex wine has a spicy profile of clove and nutmeg that are complimented by notes of beeswax. The bouquet is layered with aromas of canned peaches and chamomile. The aromas carry to the palate with a crisp acidity and almond finish.


Great with sweet and sour dishes – Southeast Asian cuisine, pork chops with apples, smoked salmon, roasted yams with honey walnuts.

Geisenheim (Guy-Zen-Hi-M) originates from Germany – specifically from The Geisenheim Institute. Geisenheim 318 is a crossing of Riesling and Chancellor. Typically the Geisenheim variety has an aromatic profile of mineral, grapefruit, peach and hints of herbs. A light and lively variety that produces dry to sweet table wines. Love working with this aromatic variety! 318 always dominates with fuzzy peach candy notes – sounds crazy but it smells just like that favourite gummy candy!
Appassimento: These hand harvested grapes were dried in our greenhouse prior to crushing and fermenting. The bunches were carefully laid in a single layer and dried for 4 – 7 days

Winemaker’s Notes:

Appassimento style is really fun to work with, after the grapes are harvested we lay them out flat on our custom built pine racks and let them dry in the greenhouse. These grapes dried for 7 days in the greenhouse, Fermented on the skins for 7 days then pressed, total fermentation was 16 days.  Really unique profile very true to the tasting notes – canned peaches, spice its very layered and different (in a good way!!) Bone dry at 3.5g/L Residual sugar and a small lot – Only 37 cases produced.
The custom pewter labels on this wine turned out amazing!
