Riesling originates from Germany; this noble white grape variety is capable of producing a variety of extraordinary wine styles. The hardy frost resistant vine makes Riesling ideal to grow in cool vineyards. Vidal and Seyval are two hybrid grape varieties that are also exceptionally cold tolerant. They are both widely planted in Ontario and can produced a great range of white wines. Baco Noir is a hybrid variety that is also widely planted in Ontario. A full flavoured grape that is used to produce dry table wines, it commonly produces deep dark pigmented red wines. Last but not least The king of red grapes, Cabernet Sauvignon originates from Bordeaux France, Cabernet Sauvignon is the result of a crossing of Cabernet Franc and Sauvignon Blanc. Producing wines of great tannin, body and aroma it adapts easily to differing soils and climates.

A really fun wine to make! By blending five different varieties, a great balance was achieved. The intense dark fruit notes and robust tannins from the reds were softened by the addition of whites and also contributed lighter fruit notes. With a higher residual sugar for a red (24g/L) this wine is a real crowd pleaser.
