Cabernet Sauvignon has conquered vineyards across the world without losing the classic character that brought it such renown. Originating in Bordeaux France Cabernet Sauvignon is the result of a crossing of Cabernet Franc and Sauvignon Blanc. Producing wines of great tannin, body and aroma it adapts easily to differing soils and climates. Shiraz Originates from Northern Rhône France where it is called Syrah in Australia its dual identity was coined Shiraz. One of the most commonly encountered descriptors of Shiraz is ‘peppery’. Spice and pepper notes along with firm tannins is the style of Rhone, and fruit forward with smooth tannins is the style of Australia. Originating in Bordeaux France Merlot is now seen in vineyards across the globe. This early ripening variety produces soft rich wines that are often described as ‘fleshy’. It is capable of producing wines that are full bodied and tannic, but the majority are produced to be friendly, soft, fruit forward wines.

A really fun blend for me to make! These three varieties really work well together – Cab Sauv we have the heavier dark fruit notes and a great structure, the Merlot aids with a lighter style of fruit and softness then the Shiraz delivers a great spiciness and ample tannin. Bone dry this wine is less than 3g/L residual sugar; stellar structure balanced and delic!
